Chicken Fajita Burrito from Fiesta Fresh

This is another great Hilton Head/Bluffton gem of a place. A few years ago, the first Fiesta Fresh opened up on Hilton Head. Think authentic mexican food that is all made with the best fresh ingredients and made fresh on the spot. It started off as a little hole in the wall place that was a locals only spot. A few later and location #2 opened on the island. Now he we stand with Fiesta Fresh #3 open in Bluffton. We were going to Amigo's today for lunch, but it ended up they were closed for Memorial Day. So, we went across to the new Fiesta Fresh and it was as great as always. I got the chicken fajita burrito. This was loaded with rice, beans, cheese, onions, peppers, and chicken. I then added in the jalapeno's, fresh cilantro, fresh pico, a little lime juice, and the fresh salsa. This was pure perfection in a flour tortilla!

Rack of Lamb, the Sequel

Last night I had Rack of Lamb at Calvert's. Tonight we had Grilled Rack of Lamb with my family in Hilton Head after a great day on the beach. If I had known that we were going to have RoL tonight, I would have gotten the duck last night. Still, I can't get enough of RoL. The best thing about tonights was that I got to go back for 2nds!

Grilled Orange Shrimp with Cilantro Lime Vinaigrette

Currently trying to expand my repertoire in the kitchen. The salad was awesome. We used romaine lettuce, mixed greens, cherry tomatoes and cucumbers. The shrimp was marinated in fresh squeezed orange juice and fresh basil. We topped everything off with a cilantro lime vinaigrette that I made from scratch. It was WONDERFUL!

Anniversary Dinner, Part 2 @ Calvert's

Tonight we went out to Calvert's Restaurant in Augusta for the 2nd part of our anniversary dinner. This place is just ridonkulous! I had the Rack of Lamb. It was seasoned and baked with basil and pesto; accompanied by garlic mashed potatoes and mint chimichurri sauce. My wife had the special of the night which was Lobster stuffed with Shrimp & Scallops with some crazy good sauce over it and a twice baked potato. They brought us out the house dessert which was a flourless chocolate & creme cake that had a Gran Marnier caramel chocolate drizzle. This meal was all kinds of outstanding.

Anniversary Dinner @ Driftaway Cafe

We got a taste of Driftaway Cafe a few weeks ago when they catered a party we were at. So tonight for our 3rd Anniversary dinner, we decided to try the restaurant out for the first time. One word: Outstanding. We started off with the crab dip. It was supposed to come out with bread, but we had them change it up to the homemade tortilla chips. These things are like crack! I enjoyed a nice Argentine Malbec and for my meal I had the Scallop & Crab Carbona. This had all kinds of awesome written all over it.
